This spicy bean dip stirs together in a flash and ramps up a Tex Mex dinner or appetizer buffet. Concocted with just three ingredients, two of which are probably on hand, it is a saucy dip. The refried beans keep well in the pantry. The pickled jalapenos store for several months stowed on the door of the fridge ready to use when you need some heat. Just stir together enough fresh sour cream for dip consistency, throw in some jalapeno heat and add a bag of chips.
This past week my sister Jo Ann came to visit for a few days. The first day she arrived at suppertime and was famished. Dinner was almost ready, an ‘all you care to eat’ buffet of Lime and Tomato Tajicos. I served her a tall glass of cranberry pomegranate juice with a splash of 7up and this bean dip starter. It gave us enough time to relax and do a little catching up before dinner while we munched away.
