The Sauce: Applesauce - A fruit sauce made from apples cooked to a pulpy, spoonable consistency. Use as an ingredient for baked goods or a natural sweetener. It’s a sauce that can also stand alone. Serve it chunky or blend until smooth.
New York is apple country and when I lived in the northern tip of the state, I used to put up 30 to 40 quarts of applesauce every apple season. That would give me about 3 quarts a month to use in applesauce bread, cookies, cake and pie. Plus, we’d eat the thick, cinnamon applesauce spooned right into a bowl. It isn’t even the same animal as the thin, watery applesauce bought off the shelf at the grocer. Our friend Debbie picked a bunch of apples at an orchard and shared a large bag of multi-variety crisp sweet ones with us. I instantly jumped to whip up an apartment size batch of applesauce in the crockpot with brown sugar, apple juice and cinnamon sticks.

3 For chunky applesauce, use a potato masher to create some texture. For smooth applesauce, use an immersion blender, food processor or blender to puree.
Use an apple peeler, slicer, corer to prep the apples. It can be purchased in kitchen stores or online. Find one with two grooved channel rods, one that makes medium slices (good size for apple pie) and one for thin slices (good size for prepping apples to dry). Use the medium channel rod for applesauce.
