It rocks!!! Here is a new version of guacamole for bleu cheese lovers. And since bleu is an acquired taste, this may be a good choice for someone who loves guacamole to ease into bleu (start with half the cheese). But for those of us who love bleu and avocados, this is a marriage made in heaven. Combining the avocado and the bleu, it becomes a thick and chunky but creamy chip dunking delight. The flavors marry even more over night so if made the day before or if by slim chance there is dip leftover, cover with plastic wrap sealed directly on the Rockamole to prevent color change.
A simple take on chicken fricassee, I learned to make this dish while in college from, Kris, one of my freshmen year roommates. Over the years, I have simplified the sauce and eliminated the biscuit style dumplings. This is a comfort food fav of my sons so I like to break out the frying pan and make a batch when I visit them.

When your family or guests come through the door, the whole house is permeated with the savory aroma. Roast twin chickens for other quick fix meals later in the week. The carrot rack converts into a side dish infused with the chicken flavor. This is a perfect menu for Sunday dinner.
