Amatriciana – One of the most famous pasta sauces in Italy, it’s named after the town of Amatrice. It’s prepared using the few ingredients that are always available, tomatoes, pancetta and crushed red pepper. It’s a very tomato-ey sauce and has just a bit of heat. A simple but gourmet pasta sauce served over piccolini or other tube pasta like penne or rigatoni. A pasta dish with such simple sauce ingredients turns into my new gourmet favorite.
