Recipe: German Chocolate Cream Pie

Active Time: 60 Minutes | Total Time: 5 Hours | Yield: 1 9-inch Pie

Ingredients
Coconut Graham Crust
5 Tbsp sweetened shredded coconut, divided
9 rectangle graham crackers (or 18 squares) broken in rough pieces, one sleeve
2 Tbsp sugar
5 Tbsp melted butter

German Chocolate Pie Filling
German's Chocolate2/3 cup sugar, divided
1/4 cup cornstarch
2 Tbsp cocoa
5 eggs yolks
1 14-ounce can coconut milk
1 cup whole milk
1/2 cup sweetened shredded coconut
1/4 tsp salt
2 Tbsp cold butter, cut in pieces
4 oz German’s Sweet Chocolate, divided
2 tsp vanilla
1/2 cup chopped pecans, divided

Coconut Whipped Cream
1 1/2 cups heavy cream, chilled
2 Tbsp powdered sugar
1/2 tsp coconut extract

Special Equipment – hand beaters, 9-inch pie dish, baking sheet

Instructions
Coconut Graham Crust
Coconut Graham Crust1 Preheat oven to 325 degrees. Place a medium bowl and the beaters in the fridge to chill. Shave 3 ounces chocolate and set aside for the pastry cream. Shave off 1 tablespoon from the remaining ounce of chocolate for dusting on top. Save the rest for the cook.

2 Sprinkle 5 tablespoons of coconut in a small baking sheet and toast in the oven on 325 degrees stirring 3 times, about 8-10 minutes. Set aside 1 tablespoon.

3 Process graham crackers, 4 tablespoons of toasted coconut and 2 tablespoons of sugar in a food processor into fine crumbs. Using a fork or rubber spatula, stir in 5 tablespoons of melted butter.

4 Dump the graham cracker mixture into a 9-inch pie viagraonline-canadapharmacyrx.com dish and press the crumbs evenly on the bottom and sides forming a crust. Bake at 325 for 10 minutes or until it is golden brown. Place on a wire rack to completely cool.

Coconut Pie Filling

6 Combine the coconut milk, whole milk, 1/2 cup shredded coconut, 1/3 cup sugar and salt in a medium sauce pan over medium heat and bring to a simmer, stirring occasionally, about 3-5 minutes. Take off the heat.

7 To temper the egg mixture, gradually whisk 1 cup of the hot coconut milk mixture into the egg mixture. Add the egg mixture to the sauce pan and bring mixture back to simmer whisking constantly until the surface just begins to bubble and thicken, about 60 seconds. Take off the heat.

8 Add 2 tablespoons cold butter, vanilla, 3 ounces shaved chocolate and whisk until it melts. Stir in pecans. Pour into the cooled coconut graham crust and smooth until even. Cover with plastic wrap placed directly on the filling to prevent a skin forming and chill for 3 or more hours or overnight.

Coconut Whipped Cream
German Chocolate Cream Pie9 Just before serving, beat the cream with 2 tablespoons of powdered sugar in a chilled bowl. Beat until soft peaks form and add the coconut extract. Continue to beat until stiff peaks form.

Tempering is the process of gradually changing the temperature. Add the hot liquid into the egg mixture to slowly increase the temperature so the eggs don’t scrabble.

Coconut milk comes in a can and is different than cream of coconut (used in drink mixes).

For a whole milk equivalent, use 14 tablespoons skim milk and 2 tablespoons heavy cream. It’s easy to measure by placing the cream in a one cup liquid measurer and adding skim milk to make 1 cup.

While toasting the coconut for this pie, make some extra and store in an airtight container. Sprinkle on sundaes, coconut cupcakes or cake, layer in a parfait, add to a fruit salad or bake into cookies or quick breads. Or use it for your next German Chocolate Cream Pie.

When I bought a box of graham crackers for this crust the usual 1 lb box has shrunk to 14.4 ounces. I used one sleeve plus one extra double cracker for this recipe.

Applications
Once the eggs are separated, save the egg whites and whip into meringue for German Chocolate Meringue Pie.

For a white on white effect, sprinkle untoasted coconut on the top of the whipped cream.

Aunt Beth treated my sister Sharon, me and Jo Ann aged 10, 8 and 5, to lime slushes one summer while renewing family ties and vacationing. It was simultaneously pucker tart and lightly sweet. 1 stick butter, room temperature
3 eggs
2 tsp vanilla extract
1/2 cup sweetened shredded coconut
1 single crust pie pastry

Special Equipment – food processor, 9-inch pie plate

Instructions
Pinto Bean Pie1 Preheat the oven to 350 degrees with a rack set to the lowest shelf position.

2 Line a 9-inch pie plate with pie pastry and crimp the edges.

3 Place the pinto beans, butter, eggs, vanilla and coconut in a food processor and process just until smooth.

4 Pour the pie filling into the pie crust. Bake on the bottom shelf at 350 degrees until a knife inserted comes out clean, about 1 hour. Let cool on a rack.

Notes
Without a food processor you can mash the beans with a potato masher, whip the eggs then combine with the rest of the ingredients.

Applications
Serve with a scoop of vanilla ice cream.

This pie could also be made in small individual pot pie dishes.

Similar to the flavor of pecan pie filling. Add a cup or two of pecan halves before baking. I love to turn the rounded side up on the top layer of the pecans for a beautiful presentation.

In December I rubbed shoulders with great cooks at The Washington Post Food and Travel holiday party. Every dish was fabulous. Love it! A favorite of mine was the baby carrots seasoned with a unique spice mix. I asked Joe Yonan if he knew something about it. He smiled broadly and said, “That’s my dish. I used homemade dukkah left over from a mix made by another recipe tester on these roasted carrots.”

Dukkah CarrotsI couldn’t wait to get home and check the Post’s website to find the recipe. Roasted Carrot, Green Bean and Coconut Salad includes the recipe. Dukkah (pronounced doo-kah) is an Egyptian spice blend made of nuts and seeds. Ana Sortun, a Boston area chef, includes toasted coconut with almonds, coriander and cumin.

My roasted triangle-cut carrots are seasoned with dukkah. Wow! I love the uniqueness of spicy, citrusy coriander with the warmth of cumin. They’re mixed with nutty almonds and coconut. It’s a refreshing new way to enjoy naturally sweet roasted carrots.

Recipe: Dukkah Carrots

Ingredients
2 lbs medium carrots, about 9-11
1 Tbsp olive oil
1 Tbsp dukkah, divided
1/2-1 tsp unsweetened dried shredded coconut

Dukkah
Spices and Nuts4 Tbsp slivered almonds
4 1/2 tsp coriander seeds
1 tbsp cumin seeds
1 Tbsp white sesame seeds
2 Tbsp unsweetened dried shredded coconut
1/4 tsp salt
1/4 tsp freshly ground black pepper

Special Equipment – baking sheet, electric spice grinder

Instructions
Triangle Cut Carrots1 Preheat oven to 425 degrees.

2 Peel carrots then cut in chunks. To make triangle chunks, cut on the diagonal then roll the carrot a half turn and slice on the diagonal again, repeat.

3 Place carrot chunks on a baking sheet. Drizzle with olive oil. Roast in the oven at 425 degrees for 35-40 minutes until tender with rich golden brown edges, stirring half way through.

4 Meanwhile toast almonds, coriander seeds, cumin seeds, Toasted and Ground Dukkahsesame seeds and coconut in a dry sauté pan on medium high heat until golden brown and fragrant, shaking frequently, about 3-4 minutes. Cool. Transfer to a electric spice grinder and coarsely grind. Place in an airtight container, add salt and pepper, then shake to combine.

5 Sprinkle carrots with 2 teaspoons dukkah. Spoon onto a serving plate, sprinkle remaining teaspoon of dukkah and dust with coconut.

Dukkah (pronounced doo-kah) is an Egyptian spice blend of nuts and seeds. It adds fragrant flavor to roasted vegetables. You can buy it online or at ethnic and gourmet markets. It’s easy to make at home and I love this version with shredded coconut.

Store the extra dukkah for up to 3 months.

Dukkah is delicious as a spice rub for chicken, pork, fish, tofu, labneh and feta cheese.

It’s also delicious on crusty bread. Brush lightly with olive oil and dust with dukkah.

Juicing Key Limes

  • 4 egg yolks
  • 1 14-oz can sweetened condensed milk
  • 1/2 cup key lime juice, about 14-18 key limes

Whipped Cream and Garnishes

  • 3/4 cup whipping cream
  • 2 Tbsp confectioner’s sugar
  • 3 key limes, thinly sliced and cut in half circles
  • 2 Tbsp toasted coconut

Special Equipment – 9-inch pie dish

Instructions
Coconut Graham Crust
1 Preheat oven to 350 degrees. Place a medium bowl in the fridge to chill.

2 Break crackers into the bowl of a food processor. Add 6 tablespoons toasted coconut, sugar and process until mixture is a fine crumb. Add melted butter and pulse.

3 Press into a 9-inch pie plate evenly lining the bottom and sides. Bake for 10 minutes at 350 degrees. Place on a wire rack to cool. Leave the oven on.

Coconut Key Lime Pie 2 Key Lime Filling
4 Meanwhile place egg yolks in a medium bowl and whisk for 2 minutes until yolks are light yellow. Add sweetened condensed milk and whisk for 2 minutes.

5 Add key lime juice and stir gently to combine. Let stand until the crust is completely cool. It will thicken.

6 Pour the filling into the crust and evenly smooth. Bake at 350 degrees for 15 minutes. Cool on a wire rack. Chill for 3 hours or overnight.

Whipped Cream Whisk Whipped Cream and Garnishes
7 Pour whipping cream in the chilled bowl. Add the confectioner’s sugar and beat until peaks are moderately stiff.

8 Dollop or pipe on the pie and garnish with key lime slices and 2 tablespoons of toasted coconut.

Notes
This pie can also be made with regular limes but since they are a little more tart, I recommend using 3 tablespoons of confectioner’s sugar in the whipped cream to balance out the sweetness of the pie.

I love to use the triple whisk pictured above to whip cream by hand. It makes short order of the work and you have complete control of how soft or stiff you want the cream.

Applications
The filling thickens enough to serve as Key Lime Pudding without baking.

  • 3-4 bananas
  • 1 10-oz can mandarin oranges
  • 7 maraschino cherries
  • 7 Tbsp shredded coconut
  • 1 cup mini marshmallows

Special Equipment – small saucepan, seven half pint jars

Instructions
Mango juice with mandarin oranges1 Pour the mango orange juice into a small saucepan and sprinkle the gelatin evenly over the juice. Let stand for 5 minutes to bloom.

2 Set the saucepan over medium heat and cook until the gelatin dissolves, about 3-5 minutes. Remove from the heat and let cool for about 5 minutes. Place in the fridge for 30-45 minutes until it begins to thicken.

3 Meanwhile slice bananas and place circles against the inside of 7 glass jars. Evenly divided mango orange juice in the jars. Evenly divide mandarin oranges in the jars. Add one cherry to Marshmallowseach jar placing near the side of the jar so it adds a color accent to the fruit. Place 1 tablespoon of coconut into each jar then place some marshmallows on top. Screw on the lid.

4 Place in the fridge to completely set, 1-2 hours or overnight.

Serve for a light evening snack. Use plastic containers to prevent breakage. Makes a great snack for kids on a hot summer day.

German Chocolate Cream Pie Shooters

German chocolate, coconut and pecans in a rich pastry cream with fresh whipped cream.

The Sauce: German Chocolate Pastry Cream – Contrary to it’s name, pastry cream is made with milk, not cream, and in this case with coconut milk. It’s a tempered filling with a little more thickening agent than pastry cream used for cream puffs, cakes or other pastries. It slices into beautiful pie wedges and is loaded with German’s sweet chocolate and shredded coconut.

‘Great Sauces Transform Good Food into Gourmet’ 

The world is round

German chocolate is German, right? My friend Tamara tried my coconut cream pie and asked me how to convert it into a German Chocolate Pie. It’s a coconut lovers pie and who could argue that the addition of chocolate wouldn’t be heavenly. After a couple of requests it perked my interest enough to go back to my kitchen lab and test it.

In the process I found the world is round, not flat. I was sure German Chocolate was German. During my research and testing I discovered it’s not German but American. Read on for the story.

Baker's-German's-Sweet-Chocolate-BarGerman chocolate was originated by the Baker’s Chocolate Company back in the 1850’s. Named after its creator Sam German, a recipe for the first German’s Chocolate Cake was printed in a newspaper, except a misprint left off the ‘s’. The original recipe is printed inside the German’s Sweet Chocolate Bar box and has the now famous Coconut Pecan frosting.

German’s Sweet Chocolate is a semi sweet chocolate with extra sugar. So you could say it’s kind of a hybrid between semi sweet and milk chocolate. If you’re a milk chocolate fan, this may be a palatable compromise for the semi sweet fans in the house. This dessert is a twist on the original German’s Chocolate Cake with rich chocolate/coconut pastry cream and crunchy chopped pecans. Serve in shooters to compliment an appetizer and dessert buffet for New Year’s. It could also be served in parfaits, sherbets, ramekins or small dishes.

Recipe: German Chocolate Cream Pie Shooters

Prep Time: 15 Min | Inactive Time: 1 Hour | Cook Time: 6 Min | Yield: 12 Servings | Level: Easy

Ingredients

  • 2/3 cup sugar, divided
  • 3 Tbsp cornstarch
  • 2 Tbsp cocoa, sifted
  • 5 eggs yolks
  • 1 14-ounce can coconut milk
  • 1 cup whole milk
  • 1/2 cup sweetened shredded coconut
  • 1/4 tsp salt
  • 4 oz German’s Sweet Chocolate Bar, divided
  • 2 Tbsp cold butter, cut in pieces
  • 2 tsp vanilla
  • 1/2 cup chopped pecans
  • 1/2 cup toasted coconut

Coconut Whipped Cream

  • 1/2 cup heavy cream, chilled
  • 2 tsp sugar
  • 1/4 tsp coconut extract

Special Equipment – 12 5-ounce shooters

Instructions

Coconut Pie Filling
2 In a small bowl, whisk 1/3 cup sugar, cornstarch and cocoa. Add egg yolks and whisk until smooth. Set aside.

3 Combine the coconut milk, whole milk, 1/2 cup shredded coconut, 1/3 cup sugar and salt in a medium sauce pan over medium heat and bring to a simmer, stirring occasionally, takes about 3-5 minutes. Take off the heat.

Then pour the tempered egg mixture into the sauce pan with the remaining coconut milk mixture and bring back to simmer whisking constantly until the surface just begins to bubble and thicken, takes about 60 seconds. Take off the heat.

chocolate-Pastry-Cream-in-shooters5 Add 2 tablespoons cold butter, vanilla, 3 ounces shaved chocolate and whisk until everything melts. Stir in pecans. Pour into the shooters up to the top. Cover with plastic wrap placed directly on the filling to prevent a skin forming and chill for 1 hour or over night.

Coconut Whipped Cream
6 Just before serving, beat the cream with 2 teaspoons of sugar in a chilled bowl. Beat until soft peaks form and add the coconut extract. Continue to beat until stiff peaks form.

German-Chocolate-Pie-Shooters7 Dollop or pipe the whipped cream on the top of each shooter. Shred some of the remaining chocolate and sprinkle for a garnish.

Tempering is the process of gradually changing the temperature. Add the hot liquid into the egg mixture to slowly increase the temperature so the eggs don’t scrabble.

Coconut milk comes in a can and is different than cream of coconut (used in drink mixes).

For whole milk equivalent, use 14 tablespoons skim milk and 2 tablespoons heavy cream. It’s easy to measure by placing the cream in a one cup liquid measurer and adding skim milk to make 1 cup.

Bakers German’s Sweet Chocolate Bar is divided into squares. Use 14 squares for the pie filling and use some of the rest for the garnish.

Applications
Serve this dessert in small bowls, cups or ramekins.

Prep Time: 25 Minutes | Inactive Time: 4 Hours | Cook Time: 26 Minutes | Yield: 6 Servings | Level: Easy

Ingredients
Toasted-Coconut-Graham-CrackersCoconut Graham Crust

  • 5 Tbsp sweetened shredded coconut, divided
  • 9 rectangle graham crackers (or 18 squares) broken in rough pieces, one sleeve
  • 2 Tbsp sugar
  • 5 Tbsp melted butter

Coconut Pie Filling

  • 2/3 cup sugar, divided
  • 1/4 cup cornstarchCoconut-Pastry-Cream
  • 5 eggs yolks
  • 1 14-ounce can coconut milk

  • 1/2 cup sweetened shredded coconut
  • 1/4 tsp salt
  • 2 Tbsp cold butter, cut in pieces

  • 1 1/2 cups heavy cream, chilled
  • 2 Tbsp sugar
  • 3/4 tsp coconut extract

Instructions
Coconut Graham Crust
1 Preheat oven to 325 degrees. Place a medium bowl and the beaters in the fridge to chill.

2 Sprinkle 5 tablespoons of coconut in a small baking pan and toast in the oven on 325 degrees stir 2-3 times, about 8-10 minutes. Set aside 1 tablespoon.

3 Process the graham crackers, 4 tablespoons of toasted coconut and 2 tablespoons of sugar in a food processor into fine crumbs. Using a fork or rubber spatula, stir in 5 tablespoons of melted butter.

4 Dump the graham cracker mixture into a 9-inch pie dish and press the crumbs evenly on the bottom and sides forming a crust. Bake at 325 for 10 minutes or until it is golden brown. Cool on a wire rack for about 1 hour.

5 Meanwhile, in a small bowl, whisk 1/3 cup sugar and the cornstarch which will help reduce lumps. Add egg yolks and whisk until smooth. Set aside.

6 Combine the coconut milk, whole milk, 1/2 cup shredded coconut, 1/3 cup sugar and salt in a medium sauce pan over medium heat and bring to a simmer, stirring occasionally, about 3-5 minutes. Take off the heat.

Tempering-the-egg-mixture7 To temper the egg mixture, gradually whisk 3/4 cup of the hot coconut milk mixture into the egg mixture. Add the egg mixture to the sauce pan and bring mixture back to simmer whisking constantly until the surface just begins to bubble and thicken, about 60 seconds. Take off the heat.

8 Add the vanilla, 2 tablespoons butter and whisk until it melts. Pour into the cooled coconut graham crust and smooth until even. Cover with plastic wrap placed directly on the filling to prevent a skin forming and chill for 3 or more hours.

9 Just before serving, beat the cream and 2 tablespoons of sugar in the chilled bowl. Beat until soft peaks form and add the coconut extract. Continue to beat until stiff peaks form.

10 Spread or pipe the whipped cream over the pie and sprinkle the reserved 1 tablespoon of toasted coconut. To serve, cut in wedges and store leftovers in the fridge.

Coconut Cream Milkshake – Make a leftover pie wedge into a milkshake by combining about 1 to 1 1/2 cup of vanilla ice cream and 1 slice of pie in a blender. Blend until chunky. Makes two servings.

Deep Dish Apple Pie

The Sauce: Orange Glaze -Brushed over the flaky pie crust as soon as the pie is done, the citrusy glaze with fresh orange zest lends a gourmet touch to an already outrageously perfect apple pie.

 

Apples and Oranges

I splurged on the McCall’s cookbook years ago while I was a pauper college student. Mom raised me on Better Homes and Gardens so I felt a bit like a trader. But I was now on my own and off at college. This was a way for me to stretch my cooking wings and fly. My college bookstore had their semi-annual 20% sale and every cookbook was on sale. I spent a bit of time thumbing through them, looking for the right one.

I remember exactly why I chose the McCall’s cookbook and it wasn’t because of the vibrant orange jacket. It had full page color plates for the first 8-10 recipes and the food looked memorable. Back in the 70’s cookbooks were still primarily text and so the visual images were unusual. One of photographed recipes was Old-Fashioned Apple Pie.

Recipe: Deep Dish Apple Pie

Prep Time: 20 Minutes | Inactive Time: 3 Hours | Cook Time: 55 Minutes | Yield: 8 Servings | Level: Easy

Ingredients
Apple-Slicer/Corer/PeelerApple Pie

  • pastry for 2 crust pie
  • 1 cup sugar
  • 1 tsp cinnamon
  • 1/8 tsp nutmeg
  • 4 Tbsp flour
  • dash salt
  • 2 Tbsp fresh lemon juice
  • 6 cups thinly sliced, pared apples
  • 2 Tbsp butter

Orange Glaze
Orange-Glaze

  • 1/4 cup powdered sugar
  • 2 tsp fresh orange juice
  • 1/2 tsp orange zest

Special Equipment – 9 1/2-inch deep dish pie dish

Instructions
1 Preheat the oven to 425 degrees. Place a baking sheet on the bottom oven rack to preheat.

2 Roll out one pie pastry and place it in a 9 1/2-Apples-with-a-splash-of-fresh-lemon-juiceinch pie dish taking care not to stretch the dough and allowing a little to hang over the edge of the dish.

3 Combine the sugar, cinnamon, nutmeg, flour, and salt in a small bowl.

4 In the bottom of a large bowl place the lemon juice. Add the apples and toss gently. Add the sugar mixture and stir to coat the apples.

5 Dump the apple mixture into the pasty-lined pie dish. Cut the butter in small chunks and dot the apple filling.

6 Roll out the other pie pastry and lay over the top of the apples allowing a little to hang over the edge of the dish. Trim the pastry as needed and crimp the edges as desired. Vent the pie crust by cutting several slits.

7 Take the hot baking sheet out of the oven and place the pie in the center. Carefully place back into the oven on the bottom shelf. Bake at 425 degrees for 45-50 minutes. May need to add a foil pie ring the last 15 minutes to prevent over browning the edges of the pastry.

8 Meanwhile, combine the powdered sugar, orange juice and zest in a small bowl.

9 When the pie is done, take out of the oven and brush a thin coat of the glaze over the top of the crust. Place on a cooling rack and let set until warm or cooled, 2-4 hours.

Crisp-ApplesUse crisp sweet / tart apples such as gala, jazz, fugi, rome or courtland.

Use an apple peeler/slicer/corer to prep the apples. It can be purchased in kitchen stores or online. Find one with two grooved channel rods, one that makes medium slices (good size for apple pie) and one for thin slices (good size for prepping apples to dry).

Keep the pie pastry chilled until ready to roll out each crust.

To create a golden bottom pie crust, preheat the oven with a baking sheet inside, use a dark colored baking sheet, and bake on the bottom shelf.

Apple pie can be stored on the counter rather than in the fridge. There is enough acid in the fruit to preserve it for the 2-3 days of it’s shelf life, if it lasts that long. This will prevent the flaky crust from becoming gummy in the fridge.

Applications
Serve with vanilla ice cream and drizzle with caramel sauce or dulce de leche. Or try whipped or pie cream.

Apple Pie Milkshake – Make a leftover pie wedge into a milkshake by combining about 1 to 1 1/2 cup of vanilla ice cream, 1 slice of pie and 1/4 to 1/3 cup of milk in a blender. Blend until chunky. Makes 2 servings.

‘Fabulous Fruit Pies’ Series

Three fabulous fruit pies, Apple with Orange Glaze, Jumbleberry, and Banana Cream.

Family pie buffet

My brother-in-law’s sister is an extraordinary pie baker and pie buffet maker. Every Thanksgiving she whips up a dozen or so different flavors of pie for dessert; fruit, cream and custard. That’s including Flour-Duster-Pastry-Wheels-Dough-Scrapercooking a delectable Thanksgiving feast! It’s a family tradition started a generation ago by their mom. Their pie buffet mostly includes ‘traditionals’ like pumpkin, apple, peach, chocolate cream, lemon meringue and coconut.

In the spirit of their family pie buffet, I’m doing this series of recipes on fruit pies with tips and serving suggestions for successful holiday dinners. The thickening agent in each pie is different, flour, cornstarch and arrowroot. If you haven’t branched into arrowroot, this might be a good time to experiment. My all time favorite pie is in this group so stay tuned for it to be revealed.

A word about storing leftover pie. Fruit pies have enough acid to store on the counter for 2-3 days of it’s shelf life. This helps protect the tender, flaky crust from becoming gummy in the fridge. Cream pies should be stored in the fridge to preserve the creamy filling and whipped cream. That’s one reason why using a graham cracker crust on cream pies is preferred.
