Pomegranate Feta Salad

Bright tasting and colorful mixed produce salad with Pomegranate Vinaigrette.

The Sauce: Pomegranate Vinaigrette – Fruity red pomegranate dressing with red wine vinegar and Dijon mustard flavor this salad with a ruby glistening dressing.

‘Great Sauces Transform Good Food into Gourmet’

Pomegranates probably originated in Iran, then were cultivated in the Middle East and elsewhere. Now they’re grown in California and Arizona. They have a burst of bright, juicy flavor with a little crunch factor.

Extracting those jewel-like nuggets is the challenge. Some markets offer packages of fresh pomegranate already freed from their spongy, pithy cases. But if you can’t find them or don’t want to afford the higher cost, here is an easy way to release the kernels.

PomegranateFill a bowl with water. Cut the fruit in half. Working under water with one half at a time, pull away the thick skin and the pomegranate seeds can easily be freed from the pith. Pour the bowl of pomegranate and water through a colander. Enjoy this easy salad with pom kernels, salty feta, crisp lettuce, then drizzle with pomegranate vinaigrette.

Feta Salad

Prep Time: 10 Minutes | Cook Time: 0 Minutes | Yield: 4 Servings | Level: Easy

Pomegranate Jelly Pomegranate Vinaigrette

  • 2 tsp pomegranate jelly or syrup
  • 1 tsp Dijon mustard
  • 3 Tbsp red wine vinegar
  • 3 Tbsp olive oil
  • dash salt
  • dash freshly ground pepper

Pomegranate Feta Salad

  • 3 cups chopped Romaine lettucePomegranate with mustard
  • 1 cup spring mix salad greens
  • 1/2 pomegranate, peeled and seeded
  • 2 oz crumbled feta cheese, about 1/2 cup

Pomegranate Dressing1 Whisk together pomegranate jelly (may need to microwave for 5-10 seconds to become liquid), mustard and vinegar. Slowly whisk in olive oil until emulsified. Season with salt and pepper.

Pomegranate Feta Salad2 Evenly dividing each ingredient, place Romaine lettuce, spring mix, pomegranate seeds and feta cheese on four salad plates. Drizzle with pomegranate vinaigrette.

Red wine vinegar is especially good in the pomegranate dressing because the flavor complements the fruit and the color enhances the dressing.

Feta cheese is more moist when it is purchased and stored in a brick rather than crumbled.

Use this dressing on other green salads.

Marinate vegetables such as fresh green beans or black beans for a Salade Nicoise platter.

Chunky but creamy Mexican Greek fusion guacamole dip.

The Sauce: Avocado Feta Cheese Dip – Creamy avocado, salty, chunky feta cheese and hot jalapeños wrapped into a Mexican Greek fusion dip. This dip eclipses Rockamole because it doesn’t darken.

‘Great Sauces Transform Good Food into Gourmet’

Guacamole goes Greek

Rockamole, inspired by Nigella Lawson, and I collided a couple of years ago. It’s a combination of avocado, bleu cheese and jalapeños. Always a huge hit, it rocks parties, starts dinners and graces appetizer buffets.

Move over and make way for my latest guacamole invention, Fetamole! It’s a kissin’ cousin to Rockamole and just as addictive.

Honk! The news is Fetamole doesn’t darken during an extended buffet service. In fact, in the rare occasion you have leftovers it won’t even darken over night in the fridge. Feta cheese has enough Fetamole with multi-grain tortillas chipssalt to counteract the chemical reaction that causes avocados to darken when exposed to air. I’m loving the taste, texture, back heat, of this chunky, creamy dip with crisp multi-grain tortillas chips. Extra! It’s green.

Prep Time: 6 Minutes | Cook Time: 0 Minutes | Yield: 2 1/2 Cups | Level: Easy

avocados, feta cheese, sour cream, pickled japapenos, green onion, lemon juice

  • 2 ripe avocados, cut in chunks
  • 1/2 cup sour cream
  • 1 tsp fresh lemon juice
  • 4 oz feta cheese, crumbled, about 1 cup
  • 1 green onion, sliced
  • 1/2 cup pickled jalapeños, finely chopped
  • 1 bag of sturdy tortilla chips

1 Place the avocado, sour cream, lemon juice, feta cheese, green onion and pickled jalapeños in a medium bowl. Stir to combine creating a creamy but chunky dip.

2 Serve with hearty tortilla chips.

Use a potato masher to break down the avocado for smaller chunks.

Store leftovers in the fridge. This avocado dip will not darken.

Serve with Mexican fare or add to a party or appetizer buffet.

Use a spoonful of Fetamole in place of regular guacamole on a Taco Salad, Quesadilla, Enchilada or burrito.

  • Increase or reduce the jalapeños depending on the heat desired.
  • Exchange green for finely diced red or sweet onion.

‘Betta’ Feta Cheese Dips Series

‘Great Sauces Transform Good Food into Gourmet’

Feta Cheese Tasting Event

I had grundle of fun with this series. I hosted my first Tasting Event and invited friends to sample the dips. I served 5 options, 4 dips plus a Bruschetta made with tomatoes and feta. Each guest received a card to record their feedback, which one they liked the best/least, and comments. It was fun because everyone had a good time getting together. The favorite by consensus is Creamy Italian Feta Dip. Lowest marks went to Tzatziki Feta Dip. I took it back into development and made some changes, different spices but kept the base feta cheese, Greek yogurt and finely diced cucumbers. Wondering if my taste testers like the makeover better?
Dips at the Feta Cheese Dips Tasting Party
Serve these dips with everything from regular or multi-grain Pita Chips or wedges, to Kettle Potato Chips or rustic multi-grain Tortilla Chips. If you’re a feta cheese lover, stay tuned for this series coming your way. Which one will be your favorite?

Recipe: Mediterranean Quinoa Salad

Prep Time: 10 Min | Inactive Time: 10 Min | Cook Time: 25 Minutes | Yield: 6-8 Servings | Level: Easy

Quinoa Salad
bell peppers, feta, beans and olives

  • 1 cup quinoa
  • 2 cups water
  • 1 cup large diced color bell peppers; mix of red, green, yellow or orange
  • 1 15-oz can cannellini beans, rinsed and drained
  • 3 oz crumbled feta cheese
  • 10 Kalamata olives, rough chopped
  • salt

Garlic Vinaigrette
garlic, dijon, olive oil, vinegar

  • 1 clove garlic, minced
  • 1 Tbsp dijon mustard
  • 2 Tbsp rice vinegar
  • 1/4 cup oil olive
  • dash of freshly ground pepper

Special Equipment – rice cooker

1 If the quinoa is not pre-washed, place in a mesh strainer and rinse with cold water. Place the quinoa and 2 cups water in a rice cooker and set to cook, about 20 minutes. Once it turns off, allow to steam for 10 minutes without removing the lid.

2 Meanwhile prepare the peppers, beans, cheese and olives and set aside.

3 For the vinaigrette, mince or microplane the garlic in a small bowl. Add the mustard, vinegar and whisk. Slowly add the oil, drop by drop at first, then in a slow stream whisking continuously. Add a dash of pepper.

add the vinaigrette to the hot quinoa4 Once the quinoa has finished steaming and while still piping hot, scoop it into a bowl, pour 3 tablespoons of the vinaigrette over and mix well. The hot quinoa will soak in the vinaigrette.

5 Once the quinoa comes to room temperature, about 10 minutes, add the peppers, beans, cheese and olives. Adjust for salt and pepper as needed.

6 Serve at room temperature or chilled.

Substitute a saucepan for the rice cooker. Place the quinoa and water in the pan. Cover and bring to a boil. Reduce to simmer and cook until water is absorbed, about 20-25 minutes. Allow to steam for 10 minutes without removing the lid.

Buy the exact amount of olives on the olive bar to control waist.

The vinaigrette must be added to the quinoa while hot to properly season it.

Feta cheese and Kalamata olives are both salty ingredients. Added salt may not be needed. Taste and add salt as needed.

Quinoa is a boutique grain that’s actually a seed and relative to leafy greens like spinach and chard. Gluten-free, it’s very high in protein containing all eight amino acids plus a source of dietary fiber, B Vitamins and iron. It has a fluffy, slightly crunchy texture and nutty flavor with circular threads around each grain.

Serve this as a side salad with roast chicken or pork chops.

Excellent option for a summer canyon picnic or ‘symphony in the park’ supper.

Make a double or triple batch of vinaigrette and enjoy it drizzled over salad greens or fresh cut vegetables.

Quinoa Soup and Salad Series

Circular threads

Grains are all the fashion. Healthy, nutty, chewy; they’re popular everywhere, not just with granola folks. One of my favorites is quinoa (pronounced keen’-wah), a boutique grain that’s actually a seed and relative to leafy greens like spinach and chard. Gluten-free, it’s very high in protein containing all eight amino acids plus a source of dietary fiber, B Vitamins and iron. It has a fluffy, slightly crunchy texture and nutty flavor with circular threads around each grain. What I love is it’s versatility. It’s a canvas where you let your imagination and creativity run wild. Try different seasonings, ingredient combinations and international flavors.

quinoa with Brussels sprout leavesI’m sharing two quinoa dishes. First, a Mediterranean salad graced with Kalamata olives, feta cheese, bell peppers and cannellini beans. Then, a rich Cajun chicken soup with carrots, Brussels sprout leaves and quinoa rather than traditional noodles or rice.

Find quinoa at the supermarket near the rice and other grains. Affordable prices on larger quantities are available at warehouse sellers like Costco and Sam’s Club.
