At my recent Feta Cheese Dips and Chips Tasting Party, the Tzatziki received the fewest streamers, half-hearted bazookas, and just a hand full of confetti. So, I placed it back on the chemistry table to make some adjustments. My gut was that it needed a more traditional Tzatziki flavor.

Who can say what is the most authentic? Recipe: Tzatziki Feta Dip

Prep Time: 5 Minutes | Cook Time: 0 Minutes | Yield: 3 Cups | Level: Easy

feta cheese, cucumber, Greek yogurt, dill, garlic and cumin

  • 1 cucumber
  • 2 cups plain Greek Yogurt
  • 1 cup crumbled feta cheese
  • 4 tsp fresh dill weed, finely chopped
  • 2 cloves garlic, finely minced
  • 2 tsp fresh lemon juice
  • 1 tsp cumin

1 Peel, seed and finely chop the cucumber. Place it on a paper towel to absorb excess juice or water.

2 Combine yogurt, feta cheese, dill weed, garlic, lemon and cumin. Stir in cucumber.

3 Chill for 30 minutes to let the flavors meld.

Whole or 2% Greek yogurt recommended.

To seed the cucumber, cut it in half the long way. Drag the tip of a small spoon along the seed bed to pull out the juicy seeds. Finely dice, then place on a paper towel to absorb any extra cucumber juice.

To strain regular yogurt, place 3 1/2-4 cups of yogurt in a sieve lined with cheesecloth. Perch that over a bowl and cover with plastic. Place in the fridge for a few hours or over night. Makes about 2 cups strained yogurt.

Serve with pita chips or toasted pita bread wedges.

Scoop the dip into a red pepper with the top cut away for a natural serving bowl.

Serve with other mezza dishes such as Humus and Baba Ghannouj.

The Sauce: Htipiti Dip – Feta cheese dip with roasted red peppers and sun dried tomatoes plus pepperoncini and crushed red pepper flakes for heat. It’s a thick, festive traditional Greek dip.

Let’s start with how to say Htipiti. I’m not too sure. My Greek friend of a friend named Helena, I already love her name, says that the ‘h’ is an ‘e’ sound and the ‘p’ is an ‘r’ sound. So let me put that together for you, eh-tee-re-tee. But just call it Roasted Red Pepper Feta Dip if you like.

Htipiti with multi-grain pita chipsThe color is as lively as the dip. The roasted red peppers and sun dried tomatoes are earthy and sweet at the same time. The pepperoncini and crushed red pepper flakes add heat. If you like a mild dip, start with the amounts listed here. If you like some pizazz, add a little more of one or the other, or a bit more of both until you get the zip your looking for. This dip has festive color and flavors. It’s a unique change up option.

Recipe: Roasted Red Pepper Htipiti

Prep Time: 10 Minutes | Cook Time: 0 Minutes | Yield: 2 Cups | Level: Easy

feta cheese, roasted red peppers, sun-dried tomatoes, pepperoncini

  • 2 cups crumbled feta cheese
  • 2 large roasted red peppers packed in oil
  • 1 Tbsp roasted red pepper oil
  • 4 sun-dried tomatoes packed in oil, finely chopped
  • 1 Tbsp sun-dried tomato oil
  • 1 Tbsp lemon juice
  • 1 clove garlic, finely minced
  • 2 green onion tops, sliced
  • 1 pepperoncini pepper
  • pinch crushed red pepper flakes

Special Equipment – food processor

1 Place feta, roasted red peppers, red pepper oil from the jar, sun-dried tomatoes, sun-dried tomato oil from the jar, lemon juice, garlic, green onion, pepperoncini pepper and crushed red pepper flakes in the bowl of the food processor. Process until smooth.

1 Taste for desired heat, add more pepperoncini and/or crushed red pepper flakes for more heat and process until smooth. Serve in a bowl right away or chill.

Purchase jars of roasted red peppers and sun-dried tomatoes packed in oil. Rather than add olive oil, use the oil the vegetables are packed in for this dip.

Grate the garlic right into the processor bowl using a microplane grater.

Serve this dip with pita chips or toasted pita bread wedges.

This dip is a good addition to a mezza platter.

  • Exchange roasted red peppers in oil with homemade roasted red peppers. Use 1 tablespoon of olive oil for the roasted red pepper oil.
