Recipe: Black Bean Salmon

Active Time: 35 Minutes | Total Time: 35 Minutes | Yield: 4 Servings

Saute Vegetables Salmon Thyme and Lime Marinade
4 6-oz salmon fillets
2 Tbsp olive oil
2 cloves garlic, smashed
1 Tbsp dried thyme
zest of 1 lime
dash salt
3 grinds freshly ground black pepper
4 thin slices zested lime, garnish
4 sprigs cilantro, garnish

Black Beans
1 medium onion
3 celery stalks
1 medium tomato
1 jalapeño
3 cloves garlic
1 Tbsp olive oil
2 15-oz cans black beans, rinsed and drained
1 tsp cumin
freshly ground black pepper
2 Tbsp chopped cilantro

Special Equipment – large skillet, grill pan

1 Place salmon fillets in a rimmed dish or plate, skin side down. Whisk together 2 tablespoons olive oil, 2 smashed cloves garlic, thyme, lime zest, salt and pepper in a small bowl. Pour over salmon and spread evenly. Marinate for 20 minutes.

2 Meanwhile dice onion, celery and tomato. Very finely dice jalapeño and mince or micro grate garlic. Heat 1 tablespoon olive oil in a large skillet on medium high heat. Add diced vegetables and garlic. Cook until softened, about 5 minutes.

Black Beans3 Add black beans and cumin to vegetables. Season with salt and pepper to taste. Reduce heat to medium and cook until beans are heated through, about 3 minutes. Take off the heat and cover to keep warm.

4 Heat a grill pan coated with non-stick spray on medium high heat. Place salmon fillets skin side up and spray skin with non-stick spray. Grill for 4-6 minutes. Carefully flip and continue grilling for 3-5 minutes, or until barely opaque in the center.

5 Stir in 2 tablespoons cilantro into the black beans. Serve fish with generous serving of black beans.

Use dry beans by rinsing, sorting, then soaking them over night. Drain then cover with water and add 1 bay leaf. Bring to boil then simmer until tender, about 90 minutes.

These black beans go great with tacos, enchiladas, quesadilla, and burritos.

Serve black beans with scrambled eggs and salsa.

fish market?

I walked across the street to the fish market for fresh salmon. Yeh! You got it. Cameron’s Fish Market is right across the street from our place. This reminds me my kitchen is about 90 x 100 inches. By the time you account for a few cabinets, fridge, dishwasher and stove there’s not much floor or counter space. Recipe: Japanese Salmon with Dashi Udon

Prep Time: 10 Minutes | Cook Time: 20 Minutes | Yield: 4 Servings | Level: Easy

Cooking Sauce Ingredients2 Tbsp dashi
2 Tbsp soy sauce
2 Tbsp light brown sugar
1 Tbsp canola oil
1 small clove garlic, minced
1 tsp minced ginger
dash freshly ground black pepper
2 green onions with tops, sliced
1 1/2 lbs salmon, cut into 4 fillets

Dashi Udon
2 3-oz bundles udon noodles
1 cup dashi
Udon Noodles1/4 cup soy sauce

Special Equipment – medium baking dish, medium saucepan

Salmon Fillets
1 Preheat the oven to 400 degrees.

2 Combine dashi, soy sauce, brown sugar, canola oil, garlic, ginger, black pepper and half the green onion in the bottom of a medium baking dish.

Salmon with Cooking Sauce3 Cut the salmon into 4 pieces and lay in the baking dish skin side down. Spoon some of the sauce over the fish. Place in the oven at 400 degrees and bake until it becomes opaque but still bright pink and flaky, about 15-20 minutes depending on thickness.

Dashi SauceDashi Udon
4 Bring 2 quarts of water to boil in a medium saucepan. Add udon and cook for 4 minutes.

5 Meanwhile combine dashi and soy sauce in a medium bowl. Heat until warm in the microwave.

Dipping Udon in Dashi Sauce6 Drain udon noodles through a strainer, then place them in dashi sauce. Balance the strainer over the saucepan or a bowl and pour the noodles back into the strainer.

7 Place a serving of udon on a each plate, top with salmon and garnish with a few remaining green onion slices.

Udon noodles are made with wheat flour and differ from soba noodles which are made from buckwheat. They don’t take long to cook and are usually served hot in the winter and cold in the summer.

Dashi is one of the easiest soup stocks to make and only takes about 45 minutes. Instant dashi graniles reconstitute in seconds and is a very good substitute. Use 1/2 teaspoon to 1 cup warm water. Stir to dissolve.

Serve the udon noodles cold with some sliced green onions.

Asian sauce with soy sauce, cilantro and ketchup
Asian Sauce

  • 1/4 cup soy sauce
  • 2 Tbsp ketchup
  • 1/4 cup fresh orange juice
  • 1 Tbsp fresh lemon juice
  • 1 clove garlic, finely grated
  • 2 Tbsp chopped cilantro
  • 1/4 tsp freshly ground black pepper

honey mustard sauce

Honey Mustard Sauce

  • 4 Tbsp coarse mustard
  • 4 tsp honey
  • 2 Tbsp vegetable oil
  • pinch salt

lemon dill sauceLemon Dill Sauce

  • 2 Tbsp olive oil
  • 1 tsp lemon zest
  • 1/2 cup lemon juice
  • 2 cloves garlic, finely grated
  • 2 tsp chopped fresh dill weed
  • pinch salt

Special Equipment – grill pan and 18 small skewers

1 Cut the fish in about 1 1/4 x 2 1/2 inch pieces using the natural shape of the fish. Place a small bamboo or wood skewer through each one.

2 Choose one sauce recipe for all the fish sticks or whisk a half recipe of each and serve all three.

Asian Sauce
3 Whisk the soy sauce, hoisin, orange juice, lemon juice, garlic, cilantro and pepper in a small bowl. Brush on all sides of the fish pieces.

Honey Mustard Sauce
4 Whisk mixing the mustard, honey, vegetable oil and salt in a small bowl. Brush on all sides of the fish pieces.

Lemon Dill Sauce
5 Whisk the olive oil, lemon zest, lemon juice, garlic, dill and salt in a small bowl. Brush on all sides of the fish pieces.

6 Spray a grill pan with non-stick spray and turn the heat to medium high. Once the pan is hot, lay the fish sticks on the grill and cook for 1-2 minutes on each side just until cooked through and flaky. Remove to a plate. Grill in two batches depending on the size of the grill pan. Spray the pan before grilling the second batch.

7 Serve with crunchy raw vegetable sticks.

Try different kinds of fish such as halibut, red snapper or swordfish.

Serve with tarter or cocktail sauce for dipping, if desired.

These quick cooking fish sticks are easy for a week night supper.

Serve with Oven Roasted French Fries, Salt & Vinegar Oven Fries, Mashed Potatoes, Steamed Rice, Glazed Carrot Sticks, crunchy vegetable sticks, or sliced fruit.
