Ingredientsbuffalo wings
Wings

  • 12 chicken wings, drums and flats split, tips removed (about 3 ½ -4 lbs)
  • 6 Tbsp butter
  • 1 small clove garlic, minced
  • 1/4 cup hot sauce
  • dash kosher salt
  • celery sticks
  • carrot sticks

Bleu Cheese Dipping Sauce

  • 1 cup crumbled bleu cheese, divided
  • 3 Tbsp sour cream
  • 3 Tbsp buttermilk
  • 1/4 cup mayo
  • 1 Tbsp white wine vinegar
  • 1/2 Tbsp minced chives
  • 3-4 grinds of pepper
  • salt

Instructions
Wings with Buffalo Sauce
1 Preheat the oven to 375 degrees.

2 Dry the wings with a paper towel so they will brown well.

3 On a baking sheet lined with non-stick foil or parchment, arrange the wing parts so they are not touching. Bake on 375 degrees for 35-40 minutes turning once halfway through.

4 In the meantime, combine the butter and garlic in a small bowl and melt in the microwave. Add the hot sauce, salt and pour into in a bowl large enough to hold the wings.

5 Add the wings and stir to coat.

Bleu Cheese Dipping Sauce
6 Meanwhile, combine 1/2 cup bleu cheese, sour cream, buttermilk, mayo and vinegar in a food processor or blender. Process until smooth.

7 Stir in remaining 1/2 cup of bleu cheese, chives and pepper. Taste and adjust for salt if needed.

8 Serve wings with bleu cheese dipping sauce , celery and carrot sticks.

Save the tips in a bag in the freezer. Continue adding to the bag until there are enough to make chicken stock or add to other chicken bones for stock.

Choose a hot sauce with the amount of heat you like or serve half the wings with mild and half with hot.

Increase or decrease the bleu cheese for a mild or potent bleu flavor. The type of bleu cheese chosen will also determine potency.

teriyaki wingsLiving in Japan for 5 ½ years, I tried multiple teriyaki sauce recipes at in-country restaurants, soba shops, sushi bars and in my home cooking. With a base of soy sauce and sugar, I use several recipes depending on my purpose. But I have to say that this recipe adapted from Tyler Florence is one of my most requested favorites. It has a perky freshness primarily because of the fresh grapefruit juice and rice vinegar. Hoisin is a Chinese barbeque sauce purchased in most any grocery store in the Asian section and adds depth. Brown sugar and ketchup add sweetness and complexity to balance the salty soy sauce. Jalapeno, ginger and garlic add heat and pungency to round it out. I love, love, love this teriyaki. When you eat the wings you will want a small dipping bowl for each person so they can dip every bite. Mmmmmm good.

Recipe: Teriyaki Wings

teriyaki wingsIngredients
The Sauce
1/2 cup Soy Sauce
1/2 cup fresh Grapefruit Juice
2 Tbsp Hoisin
2 Tbsp Ketchup
4 tsp Rice Vinegar
1/2 fresh Japapeno, minced
2 cloves Garlic, minced
2 slices fresh Ginger, minced

The Rest
12 Chicken Wings, tips removed and disjointed (3 ½ to 4 lbs) ;)
Cilantro
Sesame Seeds
Vegetable Sticks

Instructions
1 In a small bowl, combine all the sauce ingredients.

2 Place the wings in a bowl or gallon zip bag. Add 1/3 to 1/2 cup of the sauce and stir to coat.

3 On a baking sheet lined with non-stick foil or parchment, arrange the wing parts so they are not touching. Bake on 375 degrees for 35-40 minutes turning once half way through. Wings may also be grilled. ;)

4 In the meantime, place the balance of the sauce in a small pan and bring to boil. Reduce and simmer for 2-4 minutes until it slightly reduces.

5 Serve the wings garnished with cilantro and sprinkled with sesame seeds. Also serve the teriyaki dipping sauce and fresh crunchy vegetables such as sugar snap peas and radishes.

;) Wing Tips—Save the tips in a bag in the freezer. Continue adding to the bag until there are enough to make chicken stock or add to other chicken bones for stock.
;) Grilling—Grill the wings on each side until caramelized. Move to the side of the grill where the temperature is lower, cover and cook for 25-30 minutes.

• Determine heat by increasing or decreasing amount of minced jalapeno.
• Exchange jalapeno for another chili with heat such as Anaheim, Serrano or Thai.
• Exchange sugar snap peas and radishes for vegetables of choice.

Dry Rub Wings

smoky wingsOne of my favorite wing recipes, this version is so easy you could almost make it with one hand tied behind your back. Dry Rub doesn’t need marinating, doesn’t involve special ingredients, and doesn’t require refrigeration. The wings don’t last long when your serve them. It wouldn’t hurt my feelings one little bit if you grilled them. In fact, you might want to make a double batch of the dry rub for other chicken parts or ribs. The smoky spicy and lightly sweet coating caramelizes as it roasts. The tender meat is juicy with flavor in every bite. Dive in. Finger licking works, too.

1/2 tsp fresh ground Black pepper

The Rest
1/2 cup Brown Sugar
1/2 tsp Garlic Powder
1/2 tsp Cayenne Pepper
1 ½ tsp Smoked Paprika
1/2 tsp Salt
Dash fresh ground Black Pepper
12 Chicken Wings, tips removed and disjointed (3 ½ -4 lbs) ;)
Fresh Vegetable Sticks

1 Mix the brown sugar, garlic powder, cayenne, paprika, salt and black pepper in a large bowl. Add the wings parts and toss to thoroughly coat.

2 On a baking sheet lined with non-stick foil or parchment, arrange the wings parts so they are not touching. Bake on 375 degrees for 35-40 minutes turning once half way through.

3 Serve with crisp vegetable sticks and Homemade Ranch.

Ranch Dipping Sauce
4 In a food processor, combine the green onions, basil, lemon juice, mustard, olive oil, garlic, salt and pepper. Process until smooth.

;) Ranch Dipping Sauce—Excellent served over salad greens.
;) Greek Yogurt—To use regular plain yogurt, start with a 6 oz container. Scoop the yogurt into cheese cloth trained over a small bowl. Let stand in the fridge for a 1-2 hours until the liquid has seeped out leaving thick yogurt. Discard the liquid.
